Tonight for dinner, I used the following recipe from the June 2009 issue of Glamour: Watermelon Salad. H2B and I both liked it a lot, which is definitely saying something because he hates fruits and vegetables so much, scurvy is a very real possibility. If you're looking for a nice, light, summery dinner, or are in need of a side dish to bring to a picnic or potluck, I recommend this salad!



1. Simmer 1/3 cup balsamic vinegar and 1 tbsp honey in a small saucepan on low-medium heat. Reduce heat until the mixture becomes syrupy (5-7 minutes).
2. In a large bowl, toss 4 cups of cubed watermelon with arugula leaves. (I substituted baby spinach for arugula). Add the vinegar mixture and 1/4 cup olive oil; toss well.
3. Top with 1 cup feta cheese.

Serves 4.
Paired with a grilled skinless chicken breast, it's extra filling and yummy.

I'm on such a salad kick lately. I like baby spinach best as a base. A couple of combinations I'm liking: apple/walnut/beet, avocado/blueberry/almond, and green pepper/chickpea/grilled chicken.

  3. This was really good and so easy to make! I liked that it didn't take any weird, uncommon ingredients too...I only had to go out and buy some watermelon. I think it would be good with strawberries or mangoes too!
